Acini De Pepe Fruit Salad

Delicous Italian dessert/fruit salad made with pasta. Great for cookouts and get-togethers!

1 lb Acini Di Pepe, can also use pastina), cooked in salt water
Group #1:
2½ cup Fruit Juices, saved from cans
2 Tbsp Cornstarch or Flour
3 Eggs
½ tsp Salt
1 cup Sugar
Group #2:
1 Lg. Can Crushed Pineapple, drained, reserve juice
1 Lg. Can Pineapple Chunks, drained, reserve juice
1 Med Can Fruit Cocktail, drained, reserve juice
2 cans Mandarin Oranges, (drained, reserve juice
1 Sm. Pkg. Mini Marshmallows
1 Lg. Tub Cool Whip


Cook and drain pasta. Boil group (1) ingredients in on low heat until thickened. Stir often. Pour over hot acini di pepe. Refrigerate overnight or until cool. Mix group (B) ingredients and cooled acini de pepe mixture. Note - other canned fruit can be added such as peaches or pears. Delicious!
