Amazing Twice-Baked Potatoes


Potatoes are baked and halved. The pulp is combined with sour cream, cheddar cheese, crumbled bacon and green onion, and piled into the shells.



Ingredients:

  • 6 baking potatoes
  • 1 container light sour cream
  • 1 stick margarine (with 1/3-less fat, if desired)
  • 1 bag shredded sharp cheddar cheese
  • 1 lb bacon
  • 1 bunch green onions, thinly sliced
  • 1 tsp salt
  • 1 tsp pepper

Method

1. Wrap potatoes separately in foil and bake in oven at 375 degrees for 1 hour. 2. While potatoes are baking, cook bacon until crisp. Drain and set aside. 3. Melt butter in mixing bowl, add sour cream and green onion. Mix together. 4. Remove cooked potatoes from oven, leave foil around potatoes and cut each potato in half length-wise. 5. Scoop out potato "meat" leaving just enough in the shell to keep the shell intact. 6. Place potato "meat" in mixing bowl with margarine and sour cream. Using hand mixer, mix together. 7. Crumble bacon and add to mixture. 8. Mix in about half of the bag of shredded cheese. 9. Add salt and pepper. 10. Scoop mixture back into potato shells. Top with remaining cheese; place back in the oven for 10-15 minutes--or until cheese on top is melted.
