Amish Potato Casserole

Frozen shredded hashbrowns make this an easy side dish to prepare. Cheese and condensed soup add richness.
Ingredients
- 24 to 32 oz "Southern Style" Ore Ida hashbrowns, thawed
- 1 stick marg/butter, melted
- 1 can cream of chicken soup
- 8 oz sour cream
- 8 oz cheddar cheese, grated
- 1/2 cup chopped onion
- salt
- pepper

Method
Preheat oven to 375. Mix all ingredients, adding potatoes and butter/margarine last. Bake in a 2- to 3-quart casserole dish for 1 hour.
Notes: Other "cream of" soups can be substituted to make this vegetarian-friendly.
