Apple and Cider Split Pea Soup

The apples and cider add a light and sweet note to this soup, contrasting well with the smoky flavor of the ham and caramelized onions.
 

Ingredients

  • 16 oz split peas
  • 1 onion, diced
  • 1 smoked ham hock or smoked turkey leg
  • 2 Granny Smith apples, peeled and diced
  • 2 Granny Smith apples, sliced
  • 2 cups apple cider
  • 2 carrots, peeled and sliced
  • 1 package frozen spinach
  • 2 potatoes, cut in eights
  • Salt and pepper to taste
  • 1/2 teaspoon oil
  • 6 cups water or broth

Method

Place water, or broth, and apple cider in a large soup pot and bring to a boil. Add ham hock, half of onions and split peas. In a separate pan, caramelize remaining onions and apple dice. Puree and add to split peas. Boil moderately fast about 45 minutes, then add carrots, potatoes and spinach. Season with salt and pepper. Continue cooking about 30 minutes or until peas are cooked. Remove ham hock, or turkey leg, and serve with good bread and apple slices for garnish.
