Apricot Surprise

Fruit, bacon, onion and cheese top a pizza crust--serve for brunch or as an appetizer.
 

Ingredients

  • Dried apricots
  • 8 oz fresh mozzarella
  • 1 lb bacon
  • 1 large red onion
  • 2 tbsp Splenda
  • 3 pats butter
  • Olive oil
  • 1 pkg refrigerated pizza dough
  • 1 orange
  • 2 cups orange juice

Method

Soak dried apricots in orange juice for at least 4 hours. Cook bacon and drain on paper towels then chop when cooled. Melt butter in a large skillet. Cut onion in half, then into strips, and place in skillet and saute. Sprinkle Splenda over onions and cook until caramelized. Spread pizza dough onto baking sheet, brush with olive oil. Zest orange and spread over dough. Cook until very light brown in color following temperature and time directions on package. Drain and chop apricots. Slice mozzarella into thin slices. Place apricots on dough, then place bacon on top with caramelized onions. Place back into oven until cheese has melted and crust is fully cooked. Slice and serve.
