Asian Salad Supreme

There are plenty of green vegetables in this salad and the crunch of fresh radish. The homemade dressing brings it all together and makes for a great side.

Ingredients
  • 1 head iceberg lettuce, washed and torn into bite size pieces
  • 1 bunch fresh spinach, washed and torn into bite size pieces
  • 1 cup fresh bean sprouts, sliced diagonally into quarters
  • 1/2 cup fresh snow peas
  • 1 cup baby bok choy, chopped
  • 1 radish, sliced thinly
  • 1/2 teaspoon grated fresh ginger
  • 1 brick of tofu
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
 
Method

Mix all vegetables and radish in large salad bowl. In a small mixing bowl, combine all other ingredients and beat with an electric mixer until very creamy. Refrigerate dressing until ready to serve. Serve dressing and salad in separate bowls with any meal for a delicious new salad.
