Asparagus, Bowtie and Cremini with Pistachios

This ABC pasta (asparagus, bowtie and cremini) makes a fast, healthy dinner for your busy nights.
 

Ingredients

  • 1 Tbsp salt
  • 1 lb bowtie pasta
  • 2 Tbsp butter
  • 2 Tbsp extra virgin olive oil
  • 1 lb cremini mushrooms, sliced thick
  • 1 lb thin asparagus, trimmed and cut into 1 inch pieces
  • 1/8 tsp nutmeg
  • 1/2 cup roasted salted shelled pistachio nuts
  • 1/2 cup grated Parmesan cheese

Method

Bring a large pot of salted water to a boil. Add bowtie pasta and cook until al dente, approximately 10 minutes, drain. Melt butter and olive oil in a large skillet over medium heat. Add mushrooms and asparagus and cook until tender, 5-7 minutes. Remove from heat and toss with pasta, pistachios and parmesan.

 

Notes: A wonderful nutty twist to a basic pasta dish.
