Canned asparagus and peas are layered with eggs and mild shredded cheddar cheese in this comforting casserole.
Preheat oven to 350 degrees. Grease a loaf pan. Lay asparagus in a row in a loaf pan--about 1 layer thick. Spread peas across top so dish is even. Scramble eggs with salt and pepper, pour mixture on top and bang on counter to make sure egg settle to bottom of pan. Cover with foil and bake for about 45 min, or until egg is cooked. Once completely cooked, sprinkle cheese on top and let it melt before serving.

During the holidays, this is the dish I look forward to eating the most.
