Au Gratin Potatoes with Sausage

Potatoes are layered with sausage and a cream of mushroom soup mixture that has onions, peppers and pimentos. The topping of cheese brings it all together.
 

Ingredients

  • 1 lb bulk sausage
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup chopped onions
  • 1/4 cup chopped peppers
  • 1 tablespoon chopped pimento
  • 4 cups potatoes, sliced thin
  • 1 tablespoon butter
  • 1/2 cup grated cheddar cheese

Method

Cook sausage into bite-size pieces. Combine soup, milk, onions, peppers and pimento, blend well. Place half of the potatoes in greased 2 quart casserole. Add half of the sausage and cover with half of the soup mixture, repeat, dot with butter and cover. Bake at 350 degrees for 1 1/4 hours. Remove cover and sprinkle with cheese. Bake additional 10 minutes or until potatoes are tender.
