  • Servings: 24 wedges
  • Prep Time: 15 minutes
  • Cook Time: 2 minutes

Ingredients:

4 Soft Flour or Corn Tortillas
4 oz Manchego Cheese, sliced
1 Avocado; Pitted, peeled and cut into chunks
16 Canned or Jarred Jalapeno Slices

Directions:

Set 1 tortilla on a work surface. Place about a quarter of the cheese on one half, not too near edge, so cheese will not melt out as it cooks. Top cheese with a quarter of the avocado and four jalapeno slices. Fold tortilla in half over filling to form a semicircle. Heat a grill pan or skillet over medium heat. Slide uncooked quesadilla onto the pan. Press down with a weight or just press briefly with a spatula. Cook 1 minute, then flip and grill 1 minute more or until cheese has melted. Transfer the quesadilla to a cutting board and slice into 6 wedges. Serve immediately. Repeat with remaining ingredients.

I love everything about cooking! I delight in the aromas that fill the kitchen, I enjoy tweaking recipes to make them my own, and I have a good time winging it by simply combining the ingredients that I have on hand. I especially love that cooking draws people to the table. There's no better way to enjoy your family and friends then by having great times and wonderful conversations over a meal. I look forward to "mixing" it up with all of you here! I've been a message board moderator for Meredith since 2007. I've also been participating and working on message boards since 1997. I have a Liberal Arts degree and have worked as a newspaper reporter and editor.
