Avocado Salad

Avocados are sliced and arranged on serving plates, then drizzled with a dressing that combines olive oil, balsamic vinegar, red onion and Gorgonzola cheese.
 

Ingredients

  • 2 ripe avocados
  • 3 tbs. olive oil
  • 2 tbs. balsamic vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup chopped red onion
  • 1/2 cup crumbled Gorgonzola cheese

Method

Cut avocados in half and slice into thin wedges. In a small bowl, combine oil, vinegar, salt & pepper. Whisk till well blended. Stir in onion and cheese, mixing well. Place avocado wedges on plates and spoon the dressing over.
