Avocado Salad

Avocados are sliced and arranged on serving plates, then drizzled with a dressing that combines olive oil, balsamic vinegar, red onion and Gorgonzola cheese.Ingredients
- 2 ripe avocados
- 3 tbs. olive oil
- 2 tbs. balsamic vinegar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 cup chopped red onion
- 1/2 cup crumbled Gorgonzola cheese

Method
Cut avocados in half and slice into thin wedges. In a small bowl, combine oil, vinegar, salt & pepper. Whisk till well blended. Stir in onion and cheese, mixing well. Place avocado wedges on plates and spoon the dressing over.
