Bacon Potato Salad

Cooked and quartered red potatoes are tossed with salad dressing or mayonnaise, green peppers, onions, and a generous amount of crumbled bacon.
Ingredients
- 4 cups red potatoes with skins, cooked and quartered
- 1 pound crisp-cooked bacon, drained and crumbled
- 1/2 cup chopped green pepper
- 1/2 cup chopped onion
- 1 1/2 cups salad dressing or mayonnaise
- Pepper and salt

Method
Mix the potatoes, bacon, green pepper and onion in a large bowl. Add the dressing; mix lightly. Season with pepper and salt. Cover and refrigerate.
Notes: I cook this large amount of bacon in the oven.
