Baked Hasselback Potatoes

These potatoes make a great side dish. They are drizzled with butter, sprinkled with bread crumbs and Parmesan, and then baked.
Ingredients
- 4 medium all-purpose potatoes, peeled 1/3 cup butter, melted & divided
- 1/2 tsp. salt
- 1 tsp. bread crumbs
- 1 tsp. Parmesean cheese

Method
1. Preheat oven to 425 deg. Slice each potato crosswise at 1/8-in. intervals, cutting to within 1/4 in. of the bottom. 2. Arrange potatoes spoke-fashion in a buttered 10" pie dish. Drizzle 2 tbspns melted butter evenly over potatoes, and sprinkle with salt. 3. Bake potatoes at 425 on middle oven rack for 30 min. Sprinkle breadcrumbs over potatoes, drizzle with remaining melted butter & bake 20 more min. 4. Sprinkle cheese over potatoes, baste with butter in pan, & bake 5 more min. or until potatoes are golden.
Notes: It's easier to slice if you first sliver off the bottom of each raw potato so it lies flat. Then insert a long wooden skewer through potato lengthwise & 1/4" from the bottom to keep you from cutting completely through.
