Baked Onions with Sour Cream Raisin Sauce

Roasted onions are combined with a lightly sweetened sour cream and raisin sauce in this special occasion side dish.
 

Ingredients

  • 3/4 cup dairy sour cream
  • 1/4 cup packed brown sugar
  • 1/4 cup lemon juice
  • 1/4 cup parsley, minced
  • 1 cup golden raisins
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 medium sweet white onions, unpeeled
  • 8 tablespoons butter, softened

Method

In small, non-reactive bowl, mix first 7 ingredients together. Set aside. Heat oven to 375 degrees F. Place onions in a single layer in a large roasting pan and bake approximately 1 1/2 hours. Onions will be ready to come out of the oven when they are tender and the skins are golden brown. Remove skins from onions, trim ends, quarter and place in warm serving bowl. Add the butter and the sour cream/raisin mixture. Serve immediately.
