A savory casserole perfect for using the bounty of fresh yellow summer squash, with onion, butter and seasoned bread crumbs.

Wash and cut up squash, boil until tender, then drain and mash. Add onions, eggs, 1/2 of butter, sugar, salt and pepper to the mashed squash. Mix together until well combined. Pour into a greased baking dish. Melt remaining butter and pour over top of casserole. Sprinkle with breadcrumbs and bake, at 375 degrees, for about 1 hour, or until top is nice and brown.
