Balsamic Pepper and Chicken Pizza

A new twist--this pizza uses no tomato sauce or mozzarella. The crust is topped with strips of cooked chicken and bell peppers, tossed with balsamic vinegar.
 

Ingredients

  • Refrigerated or fresh pizza dough from local pizzeria
  • 2 tsp Italian seasoning
  • 2 large boneless, skinless chicken breasts
  • 2 cups mixed bell pepper slices (green, red and yellow)
  • 3/4 cup sliced onion
  • 1 tbsp minced garlic
  • 3 1/2 tbsp olive oil
  • 1/3 cup balsamic vinegar
  • 1/2 cup grated Parmesan

Method

Preheat oven to 400 degrees. Roll out pizza crust. Rub crust with 1/2 tbsp olive oil and sprinkle with Italian seasoning. Bake crust for 5 minutes and remove from oven. Slice chicken breasts into strips. Heat half of remaining olive oil in a deep skillet, over medium heat. Add chicken and cook until no pink remains. Transfer to a plate. Add the rest of oil to skillet. Add peppers, onion and garlic. Saute over medium heat until softened, about 3-4 minutes. Stir in vinegar. Return chicken to skillet. Simmer to heat through. Using a slotted spoon, remove chicken and vegetables from skillet and place on pizza crust. Sprinkle with grated Parmesan. Return to oven and bake until crust is golden brown, approximately 10-12 minutes.
