Balsamic Potatoes

These roasted potatoes are loaded with flavor--balsamic vinegar, capers, onion, garlic and rosemary.
Ingredients
- 6-7 russet potatoes
- 1 box cherry tomatoes
- 2 tbsp capers
- 1 medium onion, chopped
- 5 garlic cloves, chopped
- 1 bunch rosemary, dry or fresh
- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
- Salt and pepper to taste

Method
Preheat oven to 350 degrees. In a large bowl mix all ingredients. Place in a heavy oven pan and cover with aluminum foil. Bake for 45 minutes or until potatoes are cooked. Remove foil and leave in oven for another 10 minutes until potatoes are brown.
Notes: Recipe can be made a day before. Just reheat before serving. Excellent side dish for any meat or chicken dish.
