Barbecue Ranch Chicken Salad

A healthy salad loaded with fresh veggies, grilled chicken breasts, tortilla crisps and a barbecue flavored ranch dressing.
Ingredients
- 3 heads romaine lettuce, chopped
- 1/2 small jicama, julienned
- 2 cooked ears of corn, sliced off cob
- 1 can black beans with jalapenos
- 8 oz shredded Monterey Jack cheese
- 2 medium tomatoes, diced
- 1/2 red onion, finely diced
- 2 avocados, diced
- 4 lbs sliced and grilled chicken breast
- 6 corn tortillas cut in strips and deep fried crispy
- 4 tablespoons chopped cilantro
- 3 oz bacon bits
- Ranch dressing mixed with barbeque sauce
- Barbeque sauce to drizzle over finished salad

Method
Slice corn tortillas into strips and fry in a small amount of hot oil. When crispy, remove to a paper towel and let cool. Chop lettuce into bite sized pieces and place in refrigerator to chill. Mix ranch dressing with 1/4 cup barbeque sauce and chill. Mix all ingredients together and toss with ranch dressing, then drizzle with barbeque sauce.
