Bay Scallops with Strawberry Lime Coulis

Fresh scallops are seasoned and cooked to perfection and then served over a homemade strawberry and lime coulis that is accented with balsamic vinegar.

1 qt Strawberries
½ cup Sugar
2 Tbsp Balsamic Vinegar
2 Limes, 1 juiced and 1 for garnish
½ lb Bay Scallops
½ tsp Kosher Salt
2 Tbsp Olive Oil


In a blender, combine strawberries, sugar, balsamic vinegar, and juice from half of a lime. Puree until smooth, then strain through a fine mesh strainer. Season scallops with salt and remaining half of lime juice. Heat a medium saute pan over high heat and add olive oil. Saute scallops for 5-7 minutes until cooked through. Serve scallops over strawberry coulis with a lime garnish.
