Bay Scallops With Strawberry Lime Coulis

|2 Tbsp||Balsamic Vinegar|
|2||Limes, 1 juiced and 1 for garnish|
|½ lb||Bay Scallops|
|½ tsp||Kosher Salt|
|2 Tbsp||Olive Oil|
In a blender, combine strawberries, sugar, balsamic vinegar, and juice from half of a lime. Puree until smooth, then strain through a fine mesh strainer. Season scallops with salt and remaining half of lime juice. Heat a medium saute pan over high heat and add olive oil. Saute scallops for 5-7 minutes until cooked through. Serve scallops over strawberry coulis with a lime garnish.
