Beer Glazed Potatoes

Take pan-roasted potatoes and peppers to the next level with the glaze in this dish made with beer and brown sugar. It's an excellent side dish for almost anything that comes off the grill.
 

Ingredients

  • 2 tbsp olive oil
  • 4 medium potatoes cut into 1/2-inch wedges (1 1/4 lbs)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 medium green sweet pepper cut into 1/2-inch wedges
  • 1/2 cup chopped onions
  • 1/4 cup pale ale or lager beer
  • 1/4 cup beef broth or chicken broth
  • 1 tbsp brown sugar

Method

In a 12-inch skillet, heat olive oil over medium heat. Layer potatoes into skillet. Sprinkle with salt and pepper. Cook uncovered over medium heat for 15 minutes turning occasionally. Stir in green sweet pepper and onion. Cook and stir gently for 5 to 10 minutes more or until the vegetables are tender. Add pale ale or beer, broth, and brown sugar. Cook uncovered about 3 to 5 minutes more or until beer has thickened slightly.
