Big Man Breakfast Sandwich

This hefty sandwich layers ham, two kinds of cheeses, tomato, onion, and cooked egg on thick slices of bread, then grills them in a skillet until toasty.
Ingredients
- 1/2 stick of butter
- 2 Large eggs
- Salt and Pepper to taste
- 2 Pieces of "Texas Toast" (thick sliced bread)
- 1 Slice of Pepper-Jack Cheeese
- 1 Slice of American Cheese
- 1 Tablespoon Mayonnaise
- 2 Slices of thick honey-cooked ham
- One thick slice of tomato
- One thick slice of onion
- Bottled Hot Pepper Sauce
- Thousand island dressing

Method
Melt half of the butter in medium skillet; fry both eggs until set. Sprinkle with salt and pepper. After eggs are cooked, stack one slice of the bread, one of the cheeses, mayonnaise, eggs, ham, tomato, onion, the other cheese, sprinkle hot sauce on the other slice of bread, and add bread to the stack. Melt rest of butter in pan and fry both sides until golden brown, and cheese is melted. Let stand about 2 minutes, then cut in half diagonally. Serve with thousand island dressing.
