Black Eyed Pea Stew

A simple, healthy weeknight dinner--black eyed peas with tomatoes, ground beef, and corn served with warm tortillas and Cheddar cheese.

  • Servings: 6-8

Ingredients:

1 lb Ground Beef
2× 8 oz cans Black Eyed Peas
1× 8 oz can Stewed Tomatoes With Green Peppers
1× 8 oz can Yellow Corn
½ Yellow Onion, finely chopped
2 Tbsp Pimentos
¼ cup Diced & Pitted Black Olives
¼ cup Picante Sauce
Salt & Pepper, to taste
Grated Cheddar Cheese
Flour Tortillas

Directions:

Brown ground beef, drain and set aside. Add all other ingredients to skillet, then add salt and pepper to taste, while simmering over medium high heat. Once heated through, add ground beef. Continue to stir for five minutes. Reduce heat to low and keep warm until ready to serve.

Helpful Tips:

Delicious on fall or winter nights. Also a good New Years Eve late supper or as a party dish.
