|1 lb||Ground Beef|
|2× 8 oz cans||Black Eyed Peas|
|1× 8 oz can||Stewed Tomatoes With Green Peppers|
|1× 8 oz can||Yellow Corn|
|½||Yellow Onion, finely chopped|
|¼ cup||Diced & Pitted Black Olives|
|¼ cup||Picante Sauce|
|Salt & Pepper, to taste|
|Grated Cheddar Cheese|
Brown ground beef, drain and set aside. Add all other ingredients to skillet, then add salt and pepper to taste, while simmering over medium high heat. Once heated through, add ground beef. Continue to stir for five minutes. Reduce heat to low and keep warm until ready to serve.
Delicious on fall or winter nights. Also a good New Years Eve late supper or as a party dish.
