Blackbean Egg Salad Sandwich

A simple, healthy sandwich with black beans, hard boiled eggs, and a lime flavored dressing.
Ingredients
- 1 24 oz can black beans, drained
- 6 eggs, boiled and coarsely chopped
- 1/2 cup lime flavored mayonnaise
- 1/2 low fat sour cream
- 1/4 cup sweet relish
- 1/4 cup celery hearts, thinly slice
- A few leaves fresh cilantro, oregano and parsley, thinly sliced
- Squeeze of fresh lime juice
- Salt to taste
- Onions, thinly sliced
- Multi-grain bread

Method
In a large bowl combine first two ingredients. In another bowl combine next nine ingredients. Pour contents of bowls together and combine gently. Take one slice of multi-grain bread and place on plate. Heap a few spoonfuls of Black bean Egg Salad onto bread and spread to edges. Place thin slices of onion on top and cover with another slice of bread. To boil eggs: Take eggs out of the refrigerator at least a 1/2 hour before boiling. Place eggs in room temperature water in pot and place on burner with lid; turn burner on high. As soon as the lid starts making noise, turn heat to very low and leave for 5 minutes. After first 5 minutes, again without picking up the lid, turn burner off and leave to sit for an additional 5 minutes. As soon as the second 5 minutes is up, take the lid off the pot and run cold water over the eggs. As soon as you can handle the eggs begin peeling. The eggs will peel easily and you will be left with a beautifully cooked tender egg.
Notes: The lime flavored mayonnaise gives the salad a boost of freshness.
