A cooked mixture of black beans, diced tomatoes, green chilies, pimiento and taco seasoning mix makes the sauce for this main dish or appetizer pizza.
Heat oven to 450F. Brush bottom of pizza dough with 1 Tbsp olive oil. Pre-bake pizza dough until just starting to get golden and crispy on bottom, remove from oven, lower oven temp to 375F. Heat skillet, add 1 Tbsp olive oil. Saute onion and garlic with dash salt and dash pepper for a few minutes until sweating. Add chilies, pimientos, beans, tomatoes, taco seasoning mix, and jalapeno juice. Mix well and simmer on low for 10 minutes or until sauce begins to thicken. Remove from heat, let stand about 15 min. Top pizza dough with this mixture, spreading evenly and leaving a generous 1/2-inch of the outside edge of crust naked. Top mixture on pizza evenly with cheese.
Top with jalapeno wheels. Bake directly on middle oven rack until cheese had melted and crust is done to your liking. Slice and serve with sour cream on side.
Notes:
Cut into smaller pieces for appetizer, or larger pieces for a meal. Or, if you prefer, forget the pizza dough, and serve the mixture as a dip with nacho chips.
