BLT Ole! Layered Salad

Colorful layers of lettuce, bacon, tomatoes, cheese, and tortilla chips--a healthy side or main dish salad.
Ingredients
- 3 lb bacon, cooked and broken into bite sized pieces
- 3 cups grape tomatoes
- 1 jar sliced jalapeno peppers, optional
- 6 cups mixed salad greens, spinach and lettuce blend
- 2 lbs shredded Mexican cheese blend or mild cheddar
- 24-32 oz container sour cream
- 2 cups prepared salsa, mild or medium
- 6-8 cups tortilla chips, broken in half or thirds,
- Optional additional layers:
- 4 avocados, sliced with lemon juice to prevent browning
- 2 cans black beans, drained and chilled
- 1-2 purple onions, chopped or in very thin rings
- Chopped cilantro or parsley, to sprinkle evenly over grape tomatoes
- Black olives, chopped or sliced
- Ranch dressing, if desired

Method
Layer in a glass bowl: beans, lettuce, tomatoes, cheese, bacon, jalapenos, sour cream, salsa and chips. Optional: you may blend together sour cream and salsa, then carefully dollop around bowl, distributing evenly and spreading. Repeat until all ingredients are utilized, then add chips on top of last layer. Toss or stir each individual serving before eating, so that all flavors blend. This amount should make a nice large bowl with two layers of each ingredient, if layers are about an inch thick. Add ranch dressing, if desired.
Notes: This recipe can have ingredients added or removed to suit individual taste. Tweak as you wish.
