Breakfast Sleepy Joe Bagels

|4 oz||Herb & Garlic Spreadable Cheese, such as boursin|
|12 Tbsp||Extra Virgin Olive Oil|
|1||Small Onion Diced|
|1 clove||Garlic Minced|
|2 Tbsp||Pickled Jalapenos, chopped plus 1 tablespoon pickling liquid|
|½ lb||Country Sausage, crumbled|
|¼ cup||Tomato Ketchup|
|2 Tbsp||Dijon Mustard|
|6||Eggs, lightly beaten|
Toast the bagel halves to golden and spread the cut sides with cheese.
Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the onions and cook until translucent.
Add the garlic, jalapenos, pickling liquid and the sausage to the pan. Cook until browned, breaking it up as much as possible. Once the sausage is brown, drain off any grease. Stir in ketchup and mustard. Warm through and remove sausage mixture to a plate. Add remaining olive oil to the skillet and then the eggs and cook until just set.
Serve Sleepy Joes by spooning sausage blend on to cut side of bagels and top with eggs.
