Broccoli with Mushrooms and Red Peppers

If you're trying to eat more veggies this recipe will be a welcome addition to your table. It's easy to make and simply delicious.
 

Ingredients

  • 5 cups fresh or frozen broccoli florets
  • 3 garlic cloves, minced
  • 1 cup sliced mushrooms
  • 1 tablespoon butter
  • 1/2 cup diced roasted red pepper
  • 1 tablespoon minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

Place broccoli in a steamer basket. Place in a saucepan over 1 inch of water and bring to a boil. Cover and steam for 5-8 minutes or until crisp-tender. Meanwhile, in a nonstick skillet, saute garlic and mushrooms in butter. Stir in the red peppers, parsley, salt and pepper. Transfer broccoli to a large bowl, add mushroom and red pepper mixture and toss to coat.
