Broccoli Ramen Casserole


Using ramen on top of this casserole gives it a great crunch and you can easily add chicken to take this from a side dish to a main dish.



Ingredients:

  • 1 box broccoli and cheese rice mix, cooked according to package directions
  • 1 16 oz bag chopped broccoli, cooked and drained
  • 1 4 oz can mushroom slices, drained
  • 1 cup sour cream
  • 1 can cream of mushroom soup*
  • 1/2 soup can white wine or water
  • 1 tbsp Worcestershire sauce
  • Dash cayenne
  • Salt and pepper, to taste
  • Topping ingredients:
  • 1 package ramen noodles, lightly crushed
  • 3 tbsp butter
  • 1 cup shredded cheddar cheese

Method

Combine all casserole ingredients mixing well and pour into an 8 X 12 casserole dish that has been sprayed with nonstick cooking spray. In a medium saute pan, melt butter over medium heat and add ramen noodles and stir to coat with butter. Cook, stirring until noodles are lightly browned. Pour noodles on top of casserole ingredients and top with cheese. Bake at 325 degrees for 18 to 20 minutes, or until heated through and cheese is melted.

Notes: *To make this a main dish, replace cream of mushroom soup with cream of chicken soup and stir in 2 cup chopped, cooked chicken or turkey.
