Burger Loaf With Sweet and Sour Glaze


A veggie burger loaf with cheese baked with a glaze made of brown sugar and catsup.



Ingredients:

  • 1 large onion chopped  
  • 6 slices whole wheat bread cubed  
  • 1 stick margarine  
  • 1 can vegi-burger  
  • 2 cups (8 oz) grated cheddar cheese  
  • 4 eggs  
  • 1 tsp garlic powder  
  • 1 tsp poultry seasoning  
  • Glaze:  
  • 1/2 cup packed dark brown sugar  
  • 1/2 cup catsup  
  • 1/2 cup water

Method

In large skillet, melt margarine and saute chopped onion until translucent. Add bread cubes, combine well and brown a little. Place crumbled burger into a large mixing bowl. Add cheese, eggs (slightly beaten) seasonings and onion with bread cubes. Mix thoroughly to blend all ingredients. With a fork, press into a Pam sprayed 9x9x2 dish. In a small bowl, mix brown sugar, catsup and water. Pour glaze over the burger loaf and bake @ 350 F for 45 to 60 minutes.

Notes: To speed up the preparation process, I use a food processor to chop the onion (not too fine) then put the bread in separately to make bread crumbs. Making the glaze in a two cup measure makes it easy to pour over the loaf before baking.
