Candied Tomatoes

Halved tomatoes are drizzled with olive oil and sprinkled with salt, then baked for a couple of hours until slightly dried.
 

Ingredients

  • 6 large ripe tomatoes
  • 1/4 c. olive oil
  • Salt

Method

Preheat the oven to 325 degrees. Slice the tomatoes in half crosswise. Place the tomatoes on a baking sheet, cut side up. Pour the oil over the tomatoes. Sprinkle with desired amount of salt. Bake about 2 hours, until tomatoes are wrinkled on the outside but still somewhat moist in the center. Serve warm or cool.

 

Notes: Great with Vegetables Provencal and spoon them over chicken breasts orv omelets. Serve with grilled bread and fresh basil leaves.
