Caramelized Onion BBQ Pizza

An elegant, vegetarian dinner or appetizer pizza--just layer caramelized onions and cheese on a phyllo dough crust.
 

Ingredients

  • 6 medium sweet onions
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 5 tablespoons unsalted butter, melted and kept warm
  • 7 sheets phyllo, each about 17 X 12 inches, stacked between 2 sheets
  • wax paper and covered with a dampened kitchen towel
  • 6 tablespoons freshly grated Parmesan
  • 1/4 cup Asian style BBQ sauce
  • 1/2 cup mozzarella cheese, shredded
  • 2/3 cup finely crumbled Feta
 
Method

Peel onions and cut into 1/4 inch thick slices. Heat olive oil in large skillet or Dutch oven over medium heat. Add onions and cook, stirring frequently. Cook for approximately 30-40 minutes until a deep golden or caramel color is achieved. Remove from heat, stir in salt, and let cool. Meanwhile prepare crust by brushing a baking sheet lightly with some butter. Next put 1 sheet phyllo on butter, then brush it lightly with some of remaining butter. Sprinkle phyllo with 1 tablespoon of Parmesan, put another sheet of phyllo on top, and press it firmly so that it sticks to bottom layer. Butter, sprinkle, and layer remaining phyllo in same manner. Ending with a sheet of phyllo. Brush top sheet lightly with remaining butter and bake in a preheated 400 degree oven for 5 minutes. Remove crust from oven and spread BBQ sauce evenly on crust, leaving a 1 inch border all around. Spread onion mixture over this and sprinkle with cheeses. Bake pizza in 400 degree oven for 15 minutes, or until cheese is melted and bubbling. To serve use a pizza wheel or sharp knife cut it into squares.
