Caramelized Potatoes

These "sweet" potatoes use cooked new potatoes that are coated with a brown sugar-butter mixture that's been allowed to caramelize slightly.
 

Ingredients

  • 2 lbs new potatoes
  • 1/2 cup packed brown sugar
  • 1/3 cup butter
  • 1/2 tsp salt

Method

In a large covered saucepan, cook potatoes in boiling salted water 20 to 25 minutes or until tender. Drain; let cool. Peel potatoes, halving any large potatoes. In a large skillet combine brown sugar, butter, and salt. Cook over medium heat, stirring constantly until butter is melted and mixture is thickened and bubbly. Reduce heat. Carefully add the potatoes. Stir gently until potatoes are coated and heated through.
