Ingredients:
| ¼ cups | Diced Onion |
| 2 Tbsp | Diced Celery |
| 2 Tbsp | Olive Oil |
| 1½ cups | Diced Carrot |
| 1 Tbsp | Grated Fresh Ginger |
| 2 cups | Chicken Broth |
| Salt & Black Pepper | |
| ½ cup | Pure Maple Syrup |
Directions:
Cook onion and celery in hot oil in a saucepan until tender. Add carrots, ginger, and enough broth to cover the carrots. Bring to a boil; reduce heat. Simmer until carrots are tender. Remove saucepan from heat; cool slightly. Transfer soup to a blender. Cover and blend until pureed, adding more broth until desired consistency is reached. Season to taste with salt and pepper. Top each serving with maple syrup.
Helpful Tips:
This soup is delicious and can be made vegetarian by substituting the chicken stock for vegetable broth.
