Carrot Ginger Maple Soup

After the carrots are cooked until tender, this soup is blended and then topped with a little bit of maple syrup.

Ingredients:

¼ cups Diced Onion
2 Tbsp Diced Celery
2 Tbsp Olive Oil
1½ cups Diced Carrot
1 Tbsp Grated Fresh Ginger
2 cups Chicken Broth
Salt & Black Pepper
½ cup Pure Maple Syrup

Directions:

Cook onion and celery in hot oil in a saucepan until tender. Add carrots, ginger, and enough broth to cover the carrots. Bring to a boil; reduce heat. Simmer until carrots are tender. Remove saucepan from heat; cool slightly. Transfer soup to a blender. Cover and blend until pureed, adding more broth until desired consistency is reached. Season to taste with salt and pepper. Top each serving with maple syrup.

Helpful Tips:

This soup is delicious and can be made vegetarian by substituting the chicken stock for vegetable broth.
