Carrots (Copper Pennies)

Cooked carrot slices, chopped onion and green peppers are chilled in a mixture of tomato soup, sugar, oil, mustard, and Worcestershire sauce.
 

Ingredients

  • 1 can tomato soup
  • 1/2 cup salad oil
  • 3/4 cup sugar
  • 1 teas. prepared mustard
  • 1 teas. Worcestershire Sauce
  • 2 lb. carrots, sliced
  • 1 medium onion, chopped
  • 1 green pepper, chopped

Method

Bring first 5 ingredients to boil. Let cool. Clean and slice carrots and cook in salted water until crisp-tender. Rinse in ice water. Arrange layers of onions, carrots, and peppers in a container. Pour dressing over top and cover. Refrigerate overnight.
