Chicken Picadillo Empanadas


Circles of refrigerated pizza dough are topped with a mixture of cooked chicken, onion, honey, golden raisins, green olives, apple juice, vinegar and green olives. The dough is folded, sealed and baked.



Ingredients:

  • 2 teaspoons olive oil
  • 8-oz ground raw chicken
  • 1/2 cup diced yellow onion
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 2 tablespoons honey
  • 1 tablespoon cider vinegar
  • 1/2 cup apple juice
  • 1/3 cup golden raisins
  • 1/3 cup sliced green olives
  • 1  16-oz. refrigerated pizza dough
  • 2 tablespoons olive oil

Method

Preheat oven to 400 degrees. Lightly grease a large baking pan. Set aside. In large skillet, heat the 2 tsp. oil over medium-high heat. Stir in chicken, onion, salt, and cumin. Cook 5-7 minutes. Add honey, vinegar, apple juice, raisins and olives. Simmer an additional 5 minutes. Separate dough into 6 equal portions. Roll out on floured board into 8-inch circles. Evenly spoon chicken mixture onto dough. Moisten edges with water. Fold over forming semi-circles. Crimp edges to seal. Brush with the 2 tablespoons olive oil. Place on prepared pan and bake 12-15 minutes.
