Cheddar Potato Soup

This soup makes a great starter to any course or is the perfect meal for a cool evening when served with some crusty bread.
 

Ingredients

  • 1/3 cup chopped onion
  • 1/3 cup chopped celery
  • 2 tbsp butter
  • 4 cups potatoes, diced, peeled
  • 3 cups chicken broth
  • 8 ounces shredded cheddar cheese
  • 2 cups milk
  • 1/4 teaspoon pepper
  • 1 dash paprika
  • Seasoned croutons
  • Minced fresh parsley

Method

In a large sauce pan, saute onion and celery in butter until tender. Add the potatoes and broth and bring to a boil. Reduce heat, cover and simmer for 12-15 minutes or until potatoes are tender. Puree the soup in small batches in a blender until smooth and return to the pan. Stir in the cheese, milk, pepper and paprika. Cook and stir over low heat until cheese is melted. Serve soup hot with croutons and parsley.
