Ingredients:
| 2 | Small Zucchini |
| ¼ cup | Cornstarch |
| 1½ cup | Grated Cheddar Cheese |
| 2 | Green Onions, thinly sliced |
| 1 | Egg White |
| Salt & Pepper, to taste | |
| Sauce, optional | |
| 1 Tbsp | Fresh Lemon Juice |
| 1 cup | Mayonnaise |
| 1 tsp | Dijon Mustard |
Directions:
-preheat oven to 400F
-coarsely grate unpeeled zucchini and spread over paper towels
-cover with more paper towels and press to remoe excess water
-turn into a large bowl
-sprinkle with cornstarch and toss to mix
-add cheese and onions and stir to mix
-whisk egg white and then stir into zucchini mixture along with generous pinches of salt and pepper
-line a baking sheet with parchment
-scoop about 1/4 cup of mixture onto baking sheet and press down to form a small patty
-repeat with remaining mixture
-bake in centre of preheated oven until fritters start to firm up and are golden on the bottom, about 15 minutes
-turn fritters carefully and continue to bake for about 8 more minutes
-let stand a few minutes before serving
-for sauce: mix together lemon juice, mayo and mustard in a small bowl and serve a dollop of sauce over fritters
