Cheese-topped Califlower

Cauliflower is cooked, drained and placed on a platter, surrounded with cooked green beans. A white sauce is spooned over the cauliflower.
Ingredients
- 2 tbsp. butter
- 2 tbsp. flour
- 1 tsp. minced shallots
- 1/2 tsp. dry mustard
- 1/4 tsp. salt
- 1 cup milk
- 1 tsp. Worcestershire sauce
- 1 tsp. grated lemon peel
- 2 cups (8 oz.) shredded Cheddar cheese
- 1 whole cauliflower, cooked whole and drained
- 1 pkg. (9 oz.) frozen green beans, cooked and drained

Method
Melt butter over low heat. Stir in flour, shallots, dry mustard and salt. Cook, stirring constantly, until smooth. Remove from heat. Stir in milk, Worcestershire sauce and lemon peel. Bring to a boil over medium heat, stirring constantly. Cook and stir 1 minute more. Add cheese; stir until melted. Place the head of cooked cauliflower on a heated platter; surround with green beans. Pour cheese sauce over cauliflower. Sprinkle with paprika, if desired.
Notes: I add bacon drippings and some crumbled bacon to my beans. This dish looks pretty and is very tasty. It is so much nicer then just having a bowl of cauliflowerettes and cheese sauce.
