Cheesy Creamy Broccoli

An easy, healthy vegetable casserole--just mix all the ingredients and bake. Works well as a make-ahead dish too.
 

Ingredients

  • 10 3/4 oz can condensed cream of mushroom soup
  • 1 egg
  • 1/4 cup onions, chopped
  • 4 cups broccoli florets (fresh or frozen but thawed)
  • 8 oz mild cheddar cheese (shredded)
  • 4 oz parmesan cheese (shredded)
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Method

Preheat oven to 350 degrees F. Grease a 9 x 13 inch baking dish. Lightly chop broccoli. In a mixing bowl, mix together condensed cream of mushroom soup, egg, onions, garlic and half of both cheeses. Put broccoli in the baking dish. Pour soup mixture on top of broccoli. Add salt and pepper to taste. Sprinkle on remainder of both cheeses over top. Bake for 45 minutes for a firmer broccoli or 1 hour to make a casserole. Cheese should be a golden brown.

 

Notes: Recipe can be doubled but add 15 minutes additional cooking time.
