Cheesy Potato Planks

Ingredients:
| 3-4 | Baking Potaotes, i left the skin on and filled up the sheet pan |
| Olive Oil | |
| Salt & Pepper, to taste | |
| 1 tsp | or So of Cheese Per Potatoe Slice |
| (i Made Some With Blue Cheese Crumbles, grated cheddar cheese and grated italian blend, but you can use whatever you want or like |
Directions:
Wash potatoes and slice long ways into about 1/4 inch thick slices. Lay on a sheet pan that has been lined foil or parchment paper. Brush with olive oil. Bake in a 350 oven for 15 minutes, flip over, brush with olive oil, salt and pepper and bake another 15 minutes or until tender. Top with about a Tablespoon or so of your choice of cheese and bake for another 5-7 minutes or until the cheese melts. Be cautious on the salt if you are using a salty cheese like blue cheese.
