I read Lynnda's recipe for Mushroom and Blue Cheese Potatoes au Gratin and was in love!!! LOL I decided to see if I could think of a way to have similar flavors a bit lighter. So here is what I did. I can see adding some sauted mushrooms under the cheese next time. Since one of my sons won't eat blue cheese, I made his with other types of cheeses.

  • Prep Time: 10-15 min
  • Cook Time: 45 min
  • Total Time: 60 minutes


3-4 Baking Potaotes, i left the skin on and filled up the sheet pan
Olive Oil
Salt & Pepper, to taste
1 tsp or So of Cheese Per Potatoe Slice
(i Made Some With Blue Cheese Crumbles, grated cheddar cheese and grated italian blend, but you can use whatever you want or like


Wash potatoes and slice long ways into about 1/4 inch thick slices. Lay on a sheet pan that has been lined foil or parchment paper. Brush with olive oil. Bake in a 350 oven for 15 minutes, flip over, brush with olive oil, salt and pepper and bake another 15 minutes or until tender. Top with about a Tablespoon or so of your choice of cheese and bake for another 5-7 minutes or until the cheese melts. Be cautious on the salt if you are using a salty cheese like blue cheese.
