Cheesy Stuffed Acorn Squash

Baked acorn squash halves are filled with a cooked mixture of Italian sausage, stuffing mix, tomatoes and mushrooms, and topped with cheddar.
 

Ingredients

  • 2 medium acorn squash
  • Butter-flavored cooking spray
  • 1 14-oz can petite diced tomatoes
  • 1/2 pkg chicken-flavored stuffing mix
  • 1/2 lb. bulk Italian sausage
  • 1 cup shredded cheddar cheese
  • 1 cup sliced fresh mushrooms
  • About 1/2 cup chicken broth
 
Method

Preheat oven to 350 degrees. Cut acorn squash in half, remove seeds and prick with fork. Spray interior with butter-flavored cooking spray. Place in baking pan. Bake for 25 to 35 minutes, or until nearly tender. Meanwhile, brown sausage in skillet over medium heat. Add sliced mushrooms and tomatoes. Add stuffing mix and enough chicken broth to moisten. Remove squash halves from oven, fill cavity of each half with sausage mix, top with shredded cheese. Return to oven for 10 minutes until cheese is melted and filling is heated through.
