Cheesy Mashed Potato Casserole


A mixture of mashed potatoes, cream cheese, butter and milk is spread in a baking dish, and topped with sour cream and cheddar cheese. After baking, the mixture is garnished with chives and crumbled bacon.



Ingredients:

  • 3 lbs. white potatoes
  • Salt & pepper, to taste
  • 1 stick margarine or butter (1/2 cup)
  • 1/2 cup warmed milk
  • 1 8 oz. pkg. cream cheese, cut into cubes
  • 16 oz. container sour cream
  • 2 cups shredded cheddar cheese
  • 1 Tbsp chopped chives
  • 3 slices crisp-cooked bacon, drained and crumbled

Method

Peel, wash, and quarter potatoes. Cook in large saucepan in water until tender; drain well. Add salt, pepper, margarine, milk, and cream cheese. Mash or beat smooth with mixer. Transfer to a 9x13 baking dish sprayed with Pam. Spread sour cream over potato mixture; sprinkle shredded cheese over top. Bake, uncovered, in 350 degree oven about 20 minutes until cheese is melted. Sprinkle with chives and bacon to garnish before serving.
