
Frozen mixed vegetables and cheddar cheese make this spoon bread a tasty side dish.
STIR boiling water into cereal in large bowl until thickened; let stand 5 minutes. Stir in margarine, salt, garlic and egg yolks. Gradually stir in milk and baking powder until blended. Stir in mixed vegetables, cheese and pepper; set aside. BEAT egg whites in medium bowl with electric mixer on high speed until stiff peaks form; gently fold into cereal mixture. Pour into greased 2-quart casserole. BAKE at 375F for 15 minutes; stir. Bake an additional 40 to 45 minutes or until knife inserted in center comes out clean.
