Cherry Pesto Chicken

A package of brown and wild rice mix makes a simple supper when you add chicken, pesto, veggies and almonds.
 

Ingredients

  • 1 package brown and wild rice mix
  • 2 1/4 cups turkey or chicken broth
  • 3 large cloves garlic, minced
  • 1/4 cup yellow and green onion, chopped
  • 1 large chicken breast, cut into small strips
  • 2 parsnips, cubed and parboiled
  • 1 container sun-dried tomato pesto
  • 1/2 cup cream
  • 3 large mushrooms, sliced
  • 1/2 cup dried cherries
  • 1 tsp five spice powder
  • Salt and pepper to taste
  • Sliced almonds, optional

Method

Cut parsnips into cubes and boil until soft. Prepare rice as directed but use chicken and turkey broth instead of water. Add onion to rice and broth mixture. In a saucepan, saute chicken with 1 clove garlic, mushrooms, and cherries. Add five spice powder, salt and pepper. Add 2 tbsp pesto and cream. Combine rice with chicken mixture and garnish with sliced almonds, optional.
