Chicken and Barley Bake

This simple dish is packed with protein and flavor. What a great casserole for any occasion. The barley really makes this a hearty dish.

1 cup Chopped Onion
¾ cup Chopped Carrots
¾ cup Water
½ cup Pearl Barley
1½ tsp Instant Chicken Bouillon Granules
½ tsp Poultry Seasoning
1 clove Garlic, minced
1½ lbs Chicken Thighs, skinned
2 Tbsp Fresh Snipped Parsley


In a medium saucepan combine onion, carrots, water, barley, bouillon granules, poultry seasoning, and garlic. Heat mixture to boiling. Pour hot mixture into a 1 1/2 quart casserole dish and arrange the chicken thighs atop the mixture. Bake covered in a 350 degree F. oven for 1 hour or until barley is tender and chicken is done. Sprinkle with parsley.
