Chicken and Mushrooms Alfredo with Linguini

Chicken (or shrimp) and mushrooms are combined in a sauce made with whipping cream and parmesan cheese, served over linguini.
 

Ingredients

  • 1 1/2 to 2 lbs boneless, skinless chicken breasts cut into bite-size pieces
  • 3 tbsp butter
  • 1 lb fresh mushrooms
  • 1 to 2 tsp garlic salt, or to taste
  • Juice of 1 fresh lemon
  • 1 pint (2 cups) heavy whipping cream
  • 2-4 oz grated Parmesan cheese
  • Linguini pasta

Method

Melt butter in large frying pan or Dutch oven over medium heat. Saute chicken until no longer pink. Add mushrooms; cook quickly. Stir in garlic salt and lemon juice. Pour in whipping cream and Parmesan. Bring to a boil, whisking briskly until sauce thickens. Serve over cooked linguini.

 

Notes: You may add more Parmesan if a thicker sauce is desired. And you may also substitute shrimp for the chicken.
