Chicken and Noodles

Chicken thighs, cooked in broth, are de-boned and combined with macaroni or noodles to make this easy top-of-the-stove main dish.
 

Ingredients

  • 6 chicken thighs
  • 4 cups chicken broth or 4 cups water and boullion cubes
  • 1 pound of elbow macaroni or noodles
  • Salt and pepper to taste

Method

Cook chicken in broth or water in a large pot for 45 minutes or until done. Remove chicken from pot and turn stove off. Add bouillon cubes to pot, if using; let chicken cool so that it can be de-boned. De-bone chicken and return to pot. Turn stove back on; bring to boiling again. Add macaroni or noodles and cook on low until done. Serve.

 

Notes: Add salt and pepper when serving. This dish is great with saltines; very quick and simple.
