Chicken and Peaches

A quick, healthy meal--just saute chicken, green pepper, onion and peaches then season with balsamic vinegar and honey.
 

Ingredients

  • 1 chicken breast, cut into chunks
  • 1-2 fresh peaches or frozen equivalent
  • 1 half green pepper, cut into bite sized chunks
  • 1 small onion, diced
  • 1/8 cup balsamic vinegar
  • 1/8 cup honey
  • Optional: half a zucchini, diced

Method

Saute chicken chunks for 5 minutes. Add green pepper, zucchini and onion and saute another 4 minutes. Add peaches and saute all another minute. Add vinegar and after 10-15 seconds, add honey. Stir all together and serve.

 

Notes: Good with couscous. Don't use canned peaches as they don't have near the flavor of fresh or frozen peaches.
