Chicken Cottage Pie

A mixture of cooked chicken, cream of chicken soup, cheese and frozen vegetables is topped with a "crust" of mashed potatoes for this casserole.
Ingredients
- 2 cups chopped or shredded cooked chicken
- 1 can cream of chicken soup
- 1 1/4 cups milk
- 1 tbsp dried minced onion
- 2 tsp garlic powder
- 1 10-oz. pkg frozen vegetables, thawed
- Salt and pepper to taste
- 1 1/4 cups shredded cheddar cheese
- 5 cups mashed potatoes

Method
In mixing bowl combine all ingredients except 1/4 cup of cheese and all of the mashed potatoes; mix well. Pour mixture into buttered 2-quart casserole. Top with mashed potatoes and rest of cheese. Bake in oven at 350 degrees for 30 to 45 minutes.
Notes: This dish can be served with a tossed green salad and warm french bread & butter.
