Chicken Meatloaf

Here's a twist on meatloaf. Use ground chicken in place of beef, and season with thyme and cumin.
 

Ingredients

  • 1 1/2 pounds uncooked ground chicken
  • 1/2 cup rich cracker crumbs
  • 1 stalk celery, chopped fine
  • 1/2 of a small onion, chopped fine
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme, crushed
  • 1 teaspoon kosher salt
  • 2 tablespoons vegetable oil

Method

Mix all ingredients except 1 tablespoon oil in large bowl until evenly combined. Shape into loaf. Place in loaf pan and pour remaining tablespoon oil over loaf. Bake in preheated 375 degree oven for 40 to 45 minutes, until top is lightly browned and juices run clear when pricked (165 degrees F). Cool slightly before transferring to serving platter. Serve in 1/2-inch slices with gravy, if desired.

 

Notes: This makes awesome sandwiches the next day; just melt cheese over slices and serve on a toasted roll.
